14 Carat Cake

Ingredients

  • 2 c sifted plain flour
  • 2 tsp baking powder
  • 1 12 tsp baking soda
  • 1 12 tsp salt
  • 2 tsp cinnamon
  • 2 c sugar
  • 12 c chopped nuts
  • 1 12 c oil
  • 4 eggs
  • 2 c shredded carrots
  • 1 8 12 oz can crushed pineapple drained
  • 1 3 12 oz can flaked coconut

Directions

  1. Sift flour baking powder soda salt and cinnamon
  2. Add sugar oil and eggs
  3. Beat at medium speed for 1 minute
  4. Stir in carrots pineapple nuts and coconut
  5. Divide between 3 greased and floured 9-inch cake pans
  6. Bake in 350 oven for 40 minutes
