24-Hour Cucumber Pickles

Ingredients

  • 7 lb cucumber
  • 4 Tbsp lime
  • 12 c salt
  • 1 box alum
  • 12 box pickling spice
  • 4 lb plus 1 c sugar
  • 2 qt vinegar

Directions

  1. Cut cucumbers in thin slices and soak in lime water for 12 to 14 hours
  2. Wash and soak in salt water for four hours
  3. Bring to a boil in strong alum water
  4. Pour off alum water and dip in hot boiling water
  5. Combine spices in a bag sugar vinegar and cucumbers and simmer for 25 minutes
  6. Let cool
  7. Pack in jars and seal
  8. Makes 10 to 11 pints
