7-Up Lemon Pound Cake

Ingredients

  • 1 12 c margarine 3 sticks
  • 3 c sugar
  • 5 eggs
  • 3 c flour
  • 2 Tbsp lemon extract
  • 34 c 7-Up

Directions

  1. Cream sugar and shortening together and beat until light and fluffy
  2. Add eggs one at a time and beat well
  3. Add flour alternately with lemon extract and 7-Up
  4. Pour batter into well-greased and floured tube or Bundt pan
  5. Bake at 325 for 1 to 1 14 hours
  6. When thoroughly cool sift powdered sugar over cake This cake freezes well and stays moist
  7. Serves 16
