A Popular Zucchini Bread
Ingredients
- 3 eggs
- 1 c vegetable oil
- 3 tsp vanilla
- 1 tsp salt
- 14 tsp double acting baking powder
- 3 tsp ground cinnamon
- 1 c chopped filberts or walnuts
- 2 c sugar
- 2 c grated peeled raw zucchini
- 3 c all-purpose flour
- 1 tsp baking soda
Directions
- Beat eggs until light and foamy
- Add sugar oil zucchini and vanilla to eggs and mix lightly but well
- Combine flour salt soda baking powder and cinnamon then add to the eggzucchini mixture
- Stir all until well blended then add nuts and pour into two 9 x 5 x 3-inch greased loaf pans
- Bake 1 hour in 350 oven Remove pans from oven and cool on a rack
