A Pretty Dish Of Venison

Ingredients

  • breast of venison
  • 14 lb butter
  • salt and pepper
  • wheat flour or rolled crackers
  • boiling water
  • 1 Tbsp currant jelly

Directions

  1. Cut venison in steaks
  2. Melt butter in pan
  3. Rub steaks with mixture of salt and pepper roll in wheat flour or rolled crackers and fry a rich brown
  4. When both sides are done take them up on a dish and put cover over dredge heaping teaspoon flour into butter in pan stir until brown
  5. Put to it a small teacup of boiling water with currant jelly dissolved into it
  6. Stir and strain over meat and serve
