A Pretty Dish Of Venison

Ingredients
- breast of venison
- 14 lb butter
- salt and pepper
- wheat flour or rolled crackers
- boiling water
- 1 Tbsp currant jelly
Directions
- Cut venison in steaks
- Melt butter in pan
- Rub steaks with mixture of salt and pepper roll in wheat flour or rolled crackers and fry a rich brown
- When both sides are done take them up on a dish and put cover over dredge heaping teaspoon flour into butter in pan stir until brown
- Put to it a small teacup of boiling water with currant jelly dissolved into it
- Stir and strain over meat and serve
