Acini Di Pepe Salad

Ingredients

  • 1 16 oz pkg acini
  • 1 c sugar
  • 2 Tbsp flour
  • 1 34 c pineapple and mandarin orange juice
  • dash of salt
  • 3 egg yolks beaten
  • 1 small carton Cool Whip
  • 2 cans unsweetened pineapple tidbits drained can use unsweetened crushed pineapple reserve juice
  • 2 cans mandarin oranges drained reserve juice

Directions

  1. Cook acini like macaroni drain but not too dry as it will absorb additional moisture as it cools
  2. Rinse and cool
  3. Cook sugar flour juices salt and egg yolks until thick then cool Mix acini and cooked mixture together refrigerate 12 hours
