Almond Potato Puffs

Ingredients

  • 14 c water
  • 2 Tbsp 14 stick butter
  • 3 Tbsp all-purpose flour
  • 1 egg
  • 1 12 c cooked mashed or riced potatoes
  • salt and freshly ground pepper
  • freshly grated nutmeg
  • 12 c chopped blanched almonds
  • oil

Directions

  1. Combine the water and butter in small saucepan and bring to boil over high heat
  2. Remove from heat add flour all at once and beat until smooth
  3. Add egg blending thoroughly
  4. Let cool Add potatoes to flour-egg mixture and blend well
  5. Season to taste with salt pepper and nutmeg
  6. Flour hands lightly shape mixture into tablespoon-size balls
  7. Roll balls in chopped nuts
  8. Pour oil into a deep fryer or large saucepan and heat to 375
  9. Fry balls in batches until golden about 5 minutes
  10. Drain on paper towels Serve hot
  11. Yield 2 servings
