Almond Potato Puffs
Ingredients
- 14 c water
- 2 Tbsp 14 stick butter
- 3 Tbsp all-purpose flour
- 1 egg
- 1 12 c cooked mashed or riced potatoes
- salt and freshly ground pepper
- freshly grated nutmeg
- 12 c chopped blanched almonds
- oil
Directions
- Combine the water and butter in small saucepan and bring to boil over high heat
- Remove from heat add flour all at once and beat until smooth
- Add egg blending thoroughly
- Let cool Add potatoes to flour-egg mixture and blend well
- Season to taste with salt pepper and nutmeg
- Flour hands lightly shape mixture into tablespoon-size balls
- Roll balls in chopped nuts
- Pour oil into a deep fryer or large saucepan and heat to 375
- Fry balls in batches until golden about 5 minutes
- Drain on paper towels Serve hot
- Yield 2 servings
