Aloha Carrot Cake

Ingredients

  • 3 medium carrots peeled and shredded
  • 1 c sugar
  • 12 c vegetable oil
  • 2 eggs
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 14 tsp mace
  • 1 12 c flour
  • 1 8 12 oz can crushed pineapple undrained
  • 1 tsp cinnamon

Directions

  1. Preheat oven to 375
  2. Add sugar oil eggs baking powder soda cinnamon salt and mace to shredded carrots mix
  3. Add flour combine with mixture
  4. Add pineapple
  5. Turn into a 9-inch greased and floured pan
  6. Bake until cake springs back when lightly touched in center 30 to 35 minutes
  7. Refrigerate unused portion
