Amaretto Chocolate Cream Pie
Ingredients
- 1 c sugar
- 13 c cornstarch
- 14 tsp salt
- 4 egg yolks
- 2 34 c milk
- 2 1 oz sq unsweetened chocolate chopped
- 14 c Amaretto
- 2 tsp vanilla
- 1 9-inch pastry shell baked
- 1 c whipping cream
- 1 Tbsp Amaretto
- 14 c sifted powdered sugar
Directions
- Combine first 4 ingredients in heavy saucepan stir well Gradually stir in milk add chocolate
- Cook over medium heat stirring constantly until mixture thickens and reaches 160 Remove from heat
- Stir in 14 cup Amaretto and vanilla
- Pour into pastry shell
- Place a piece of plastic wrap directly on top of filling
- Chill 8 hours
- Combine whipping cream 1 tablespoon Amaretto and powdered sugar
- Beat until soft peaks form
- Remove plastic wrap and spread mixture on pie
