Angel Pecan Pie

Ingredients
- 3 egg whites
- 1 c sugar
- 1 tsp vanilla
- 1 c pecans chopped
- 1 c saltine cracker crumbs
Directions
- Beat egg whites until frothy
- Add sugar gradually with vanilla
- Beat until mixture forms soft peaks
- Add cracker crumbs and pecans together
- Fold into egg white mixture
- Bake in 9-inch pan for 30 minutes at 325
- Cool thoroughly
- Top with 1 12 boxes Cool Whip mixed according to directions on box
- Sprinkle with nuts and coconut if desired
