Anise Cookies

Ingredients

  • 1 tsp salt
  • 4 eggs
  • 2 c sugar
  • 1 tsp anise extract
  • 4 c flour

Directions

  1. Add salt to eggs and beat until thick add sugar gradually Continue beating until sugar is dissolved
  2. Add anise and beat until thoroughly blended
  3. Beat in flour to make a moderately stiff dough
  4. Chill dough for several hours or overnight roll into a rectangular sheet 14 to 12-inch thick on floured board
  5. Cut cookies in 1 12-inch squares place on greased baking sheet and chill uncovered for about 1 hour
  6. Bake at 325 for 15 minutes Cool and store in covered container
  7. These can keep for weeks Makes 60 cookies
