Another Zucchini Bread

Ingredients

• 3 eggs
• 1 c brown sugar packed
• 1 c granulated sugar
• 1 c vegetable oil
• 2 c grated zucchini
• 1 tsp vanilla
• 3 c all-purpose flour
• 12 tsp cinnamon
• 1 tsp baking powder
• 1 tsp baking soda
• 1 tsp salt
• 1 c raisins or chopped nuts

Directions

1. Heat oven to 325
2. Beat eggs until frothy
3. Stir in sugars oil zucchini and vanilla
4. Combine dry ingredients
5. Stir into zucchini mixture until well mixed
6. Stir in raisins or nuts
7. Pour into 2 well-greased 9 x 5 x 3-inch loaf pans
8. Bake 1 hour
9. Cool 10 minutes in pan
10. Remove to wire rack
11. Cool thoroughly before slicing
12. Freezes well
