Apple And Pecan Bread Pudding

Ingredients

• 1 8 oz pkg cornbread stuffing mix
• 2 apples peeled cored and grated
• 1 c chopped pecans
• 1 c yellow raisins
• 2 tsp pumpkin pie spice
• pinch of powdered cloves
• 2 eggs beaten
• 1 c apple cider
• 12 c honey or sugar
• 2 Tbsp melted butter

Directions

1. In a bowl toss together the first 6 ingredients until thoroughly mixed
2. Beat together remaining ingredients and stir into fruit and nut mixture
3. Place in a buttered 10-inch porcelain baking dish and bake in a 350 oven for 30 minutes or until top is beginning to brown
4. Serves 8
5. Good with chicken turkey or pork
