Apple Cider Stew

Ingredients

  • 3 large onions sliced
  • 3 Tbsp vegetable oil
  • 2 lb beef cut in chunks
  • 3 Tbsp flour
  • 1 tsp salt
  • 14 tsp pepper
  • 14 tsp thyme leaves
  • 1 12 c apple cider or juice
  • 1 Tbsp ketchup
  • 3 large potatoes peeled and cut in chunks
  • 4 carrots peeled and cut in chunks
  • 1 small 7 oz can whole kernel corn optional

Directions

  1. Brown onions in hot oil push aside and brown meat
  2. Combine flour salt pepper and thyme add to pan and stir
  3. Stir in cider and ketchup
  4. Add water to thin if necessary
  5. Cover and cook slowly until meat is almost tender about 2 hours
  6. Add potatoes carrots and corn simmer 30 minutes or until vegetables are done
  7. Makes 6 servings
