Apple Cider Stew
Ingredients
- 3 large onions sliced
- 3 Tbsp vegetable oil
- 2 lb beef cut in chunks
- 3 Tbsp flour
- 1 tsp salt
- 14 tsp pepper
- 14 tsp thyme leaves
- 1 12 c apple cider or juice
- 1 Tbsp ketchup
- 3 large potatoes peeled and cut in chunks
- 4 carrots peeled and cut in chunks
- 1 small 7 oz can whole kernel corn optional
Directions
- Brown onions in hot oil push aside and brown meat
- Combine flour salt pepper and thyme add to pan and stir
- Stir in cider and ketchup
- Add water to thin if necessary
- Cover and cook slowly until meat is almost tender about 2 hours
- Add potatoes carrots and corn simmer 30 minutes or until vegetables are done
- Makes 6 servings
