Apple Cinnamon Raisin Mini-Muffins

Ingredients

  • 1 c all-purpose flour
  • 1 c quick-cooking rolled oats
  • 3 Tbsp firmly packed brown sugar
  • 2 tsp baking powder
  • 12 tsp cinnamon
  • 1 large egg
  • 12 c apple juice
  • 3 Tbsp salad oil
  • 1 apple peeled cored and shredded
  • 12 c raisins

Directions

  1. In small bowl stir together flour oats sugar baking powder and cinnamon
  2. In another bowl beat to blend egg juice oil apple and raisins
  3. Add dry ingredients stir just until moistened
  4. Spoon batter equally into 24 greased tiny muffin pans 1 12-inch diameter
  5. Bake at 400 until well browned 20 to 25 minutes
  6. Remove from pans serve warm or cool
  7. If made ahead package cool muffins in an airtight container and hold at room temperature up until next day
  8. Freeze to store longer
