Apple Pound Cake

Ingredients

  • 2 12 c flour
  • 1 Tbsp baking powder
  • 14 tsp baking soda
  • 1 c sugar
  • 12 c margarine
  • 14 c buttermilk or plain nonfat yogurt
  • 8 oz 1 c egg substitute
  • 2 medium apples peeled and diced 2 c
  • 2 tsp vanilla

Directions

  1. Heat oven to 350
  2. Spray a 10-inch tube pan with Pam
  3. Mix flour baking powder and soda until blended
  4. In a large bowl beat sugar margarine and buttermilk about 4 minutes
  5. With a mixer on medium speed alternately add flour mixture and egg substitute
  6. Beat until well blended and fluffy
  7. Stir in apples and vanilla
  8. Spread in pan
  9. Bake 1 hour or until golden brown and a pick inserted in center of cake comes out clean
  10. Cool on wire rack 10 minutes
  11. Turn out onto rack and cool completely Dust with confectioners sugar
