Apple Snack Cake

Ingredients

• 4 medium apples diced
• 2 c white sugar
• 2 eggs well beaten
• 1 c corn oil
• 2 12 c flour
• 1 tsp allspice
• 2 tsp cinnamon
• 1 tsp nutmeg
• 12 tsp salt
• 2 tsp soda
• 1 c raisins
• 1 c pecans

Directions

1. Cover diced apples with sugar
2. Let stand until liquid rises stirring occasionally until sugar dissolves
3. Blend together eggs and corn oil
4. Add to apple-sugar mixture
5. Sift together flour allspice cinnamon nutmeg salt and soda
6. Add raisins and pecans
7. Add flour mixture to apple mixture
8. Beat by hand as too much mixing makes it crumble
9. Pour into greased 9 x 13 x 2-inch pan
10. Bake at 350 for 50 to 55 minutes
11. After it comes out of the oven poke holes in cake and pour the following sauce over top
