Apricot Chicken
Ingredients
- 2 lb boned chicken breasts
- 1 Tbsp lemon juice
- 1 c dry Marsala wine
- oregano
- 17 oz can apricots drained
- 14 to 12 stick butter unsalted
- garlic powder
Directions
- Pound chicken breasts and put in baking dish
- Puree apricots in blender and add lemon juice
- Pour mixture evenly over chicken Sprinkle with oregano and garlic powder
- Heat Marsala and butter in saucepan until butter is melted
- Pour over chicken
- Place under broiler approximately 30 minutes until glaze is brown Serve with rice or rice pilaf and green veggie
- Serves 6
