Apricot Chicken

Ingredients

  • 2 lb boned chicken breasts
  • 1 Tbsp lemon juice
  • 1 c dry Marsala wine
  • oregano
  • 17 oz can apricots drained
  • 14 to 12 stick butter unsalted
  • garlic powder

Directions

  1. Pound chicken breasts and put in baking dish
  2. Puree apricots in blender and add lemon juice
  3. Pour mixture evenly over chicken Sprinkle with oregano and garlic powder
  4. Heat Marsala and butter in saucepan until butter is melted
  5. Pour over chicken
  6. Place under broiler approximately 30 minutes until glaze is brown Serve with rice or rice pilaf and green veggie
  7. Serves 6
