Apricot Foldovers

Ingredients

  • 2 c all-purpose flour
  • 34 c margarine
  • 2 egg yolks
  • 2 Tbsp sugar
  • apricot preserves
  • 1 egg slightly beaten
  • 1 Tbsp milk
  • finely chopped nuts

Directions

  1. Add cut-up margarine to flour
  2. Make well in flour add egg yolks and sugar thats been mixed together
  3. Mix with fingers sprinkle with 2 tablespoons cold water
  4. Continue to work with fingers
  5. Make into a ball wrap in wax paper and refrigerate until chilled
  6. Preheat oven to 325
  7. Take dough out and divide into 2 balls refrigerate one
  8. Roll part of dough to about 18-inch thickness on slightly floured surface
  9. Cut into 2 12-inch rounds
  10. Put rounds on slightly greased cookie sheet
  11. In center of each put 12 teaspoon of apricot preserves and pinch around edge or use fork
  12. Brush top with mixture of egg and milk Sprinkle with nuts
  13. Bake 18 to 20 minutes or until lightly brown Remove from rack
  14. Cool
  15. Makes about 5 dozen
