Apricot Meringue BarsMakes 16 Servings

Ingredients

  • 12 c soft butter or margarine
  • 12 c sugar
  • 2 egg yolks
  • 1 14 c sifted flour
  • 1 c apricot preserves
  • 2 egg whites
  • 13 c sugar
  • 1 c finely chopped walnuts

Directions

  1. Set oven at moderate 350
  2. Blend butter 12 cup sugar and egg yolks
  3. Work in flour
  4. Lightly flour hands and pat into well-greased 7 12 x 11 12-inch baking dish
  5. Bake 15 minutes Remove from oven and spread evenly with preserves
  6. Beat egg whites until foamy gradually beat in 13 cup sugar
  7. Continue beating until peaks form then fold in nuts
  8. Spread carefully over preserves
  9. Return to oven and bake 25 minutes
  10. Cool and cut into bars
  11. Makes about 16
