Apricot Meringue BarsMakes 16 Servings

Ingredients
- 12 c soft butter or margarine
- 12 c sugar
- 2 egg yolks
- 1 14 c sifted flour
- 1 c apricot preserves
- 2 egg whites
- 13 c sugar
- 1 c finely chopped walnuts
Directions
- Set oven at moderate 350
- Blend butter 12 cup sugar and egg yolks
- Work in flour
- Lightly flour hands and pat into well-greased 7 12 x 11 12-inch baking dish
- Bake 15 minutes Remove from oven and spread evenly with preserves
- Beat egg whites until foamy gradually beat in 13 cup sugar
- Continue beating until peaks form then fold in nuts
- Spread carefully over preserves
- Return to oven and bake 25 minutes
- Cool and cut into bars
- Makes about 16
