Apricot Pinwheels

Ingredients

  • 1 c dried apricots finely chopped
  • 12 c boiling water
  • 2 12 c sifted all-purpose flour
  • 12 tsp baking powder
  • 10 Tbsp butter or margarine softened
  • 14 c firmly packed brown sugar
  • sugar substitute Sweet N Low to equal 4 Tbsp sugar
  • 6 Tbsp cold water
  • 12 c finely chopped pecans optional

Directions

  1. Combine apricots and boiling water allow to stand until most of the water is absorbed drain
  2. Sift flour and baking powder into bowl
  3. Beat butter or margarine brown sugar sugar substitute and water until well blended
  4. Add the flour mixture blend with a fork until the dough forms a ball
  5. Place the dough on wax paper flatten slightly
  6. Wrap in the wax paper chill in the freezer 20 minutes
