Apricot Pinwheels
Ingredients
- 1 c dried apricots finely chopped
- 12 c boiling water
- 2 12 c sifted all-purpose flour
- 12 tsp baking powder
- 10 Tbsp butter or margarine softened
- 14 c firmly packed brown sugar
- sugar substitute Sweet N Low to equal 4 Tbsp sugar
- 6 Tbsp cold water
- 12 c finely chopped pecans optional
Directions
- Combine apricots and boiling water allow to stand until most of the water is absorbed drain
- Sift flour and baking powder into bowl
- Beat butter or margarine brown sugar sugar substitute and water until well blended
- Add the flour mixture blend with a fork until the dough forms a ball
- Place the dough on wax paper flatten slightly
- Wrap in the wax paper chill in the freezer 20 minutes
