Arizona Baked Frijoles

Ingredients

  • 2 lb pink or pinto beans
  • 1 tsp salt
  • 1 tsp soda
  • 2 small white onions minced
  • 3 tsp honey
  • celery salt
  • cayenne pepper
  • small clove garlic

Directions

  1. Cover beans with cold water let stand overnight
  2. In the morning drain and cook with fresh water to which salt and soda have been added
  3. Let the beans simmer until tender
  4. Place onions and honey in the bottom of a casserole and cover them with the drained beans
  5. Add seasonings
  6. Rub the lid of the casserole thoroughly with the halved clove of garlic
  7. Cover and bake at 450 until completely tender
