Artichoke Hearts Au Gratin

Ingredients

  • 16 to 20 oz frozen artichoke hearts
  • 14 c butter
  • 34 tsp salt
  • dash pepper
  • 1 tsp onion powder
  • 14 tsp dry mustard
  • 13 c flour
  • 1 12 c milk
  • 1 egg lightly beaten
  • 12 c grated Cheddar cheese
  • 1 Tbsp fine dry bread crumbs
  • Dash of paprika

Directions

  1. Cook artichokes as package directs
  2. Drain reserving 12 cup of the liquid
  3. Melt butter in a saucepan over low heat stir in flour salt pepper onion powder and dry mustard
  4. When flour mixture is smooth and bubbly gradually stir in reserved cooking liquid and milk
  5. Cook over heat stirring constantly until thickened
  6. Remove from heat
  7. Combine beaten egg with half of grated cheese
  8. Gradually stir hot sauce mixture into egg and cheese mixture
  9. Blend well
  10. Place artichokes in a shallow baking dish in a single layer
  11. Pour sauce over artichokes sprinkle with cheese bread crumbs and sprinkle with paprika
  12. Bake at 425 for about 20 minutes
  13. Serves 6
