Artichoke Nibbles
Ingredients
- 2 6 oz jars marinated artichoke hearts
- 1 small onion finely diced
- 4 eggs
- 14 c fine bread crumbs
- 14 tsp salt
- 18 tsp pepper
- 18 tsp oregano
- 18 tsp Tabasco
- 12 lb sharp Cheddar cheese approximately 2 c
- 2 Tbsp parsley minced
Directions
- Drain marinade from 1 jar of artichoke hearts into a frying pan
- Add onion and saute until softened
- Drain liquid from other jar of artichoke hearts and discard
- Chop artichokes into small pieces
- In a bowl beat eggs with fork
- Add crumbs salt pepper oregano and Tabasco sauce
- Stir in cheese parsley artichokes and onion
