Asparagus Croquettes

Ingredients

  • 1 12 c canned asparagus
  • 1 tsp salt
  • 4 Tbsp flour
  • 2 Tbsp water
  • 12 c cracker crumbs
  • 1 egg slightly beaten
  • 1 c milk scalded
  • 3 Tbsp butter or butter substitute
  • 3 hard-cooked eggs chopped

Directions

  1. Combine milk flour butter or butter substitute and salt Cook over hot water until thick and smooth
  2. Add canned asparagus and chopped eggs
  3. Mix quickly and lightly in cracker crumbs
  4. Dip in egg which has been diluted with water
  5. Roll in cracker crumbs Fry in deep fat at 390 until browned
