Asparagus Vinaigrette

Ingredients

  • 2 lb fresh asparagus cooked 5 minutes and cooled
  • 12 tsp salt
  • 12 tsp pepper
  • 1 Tbsp prepared English mustard
  • 12 c olive sesame or peanut oil
  • 13 c wine vinegar
  • 1 Tbsp chives chopped
  • 2 Tbsp pickle relish
  • 2 hard-cooked eggs sieved
  • bibb lettuce

Directions

  1. Mix dry ingredients stir in oil and vinegar
  2. Blend well
  3. Add mustard chives relish and eggs
  4. Chill and serve over asparagus on lettuce
