Aunt Mamie'S Tomato Relish(Good To Put On Vegetables)

Ingredients
- 24 ripe tomatoes
- 4 c. vinegar (red vinegar, White Oaks Brand best)
- 4 hot peppers or 6 small
- 6 onions
- 1/4 c. sugar to 1/2 c. to taste (varies with vinegar)
- 1/4 c. salt
- 2 heaping tsp. each of mustard, cinnamon and ginger
Directions
- In a cloth, put 2 heaping teaspoons of mustard (ground), cinnamon and ginger.
- Tie up cloth.
- Scald tomatoes and peel.
- Cut up and mix all ingredients.
- Cook until thick (use rubber gloves when cutting up hot peppers).
- Cook about 3 hours until thick. Makes about 5 or 6 pints.
