Avocado Corn Quiche
Ingredients
- 3 ears fresh or frozen corn on the cob scraped of kernels
- 34 c grated Havarti cheese or any white cheese
- 4 green onions tops only chopped
- 1 12 ripe avocados peeled and chopped
- 12 c heavy cream
- 12 c milk
- 3 eggs lightly beaten
- 12 tsp salt
- dash of Tabasco
- 10-inch partially baked pie shell
Directions
- Using your favorite pie crust recipe fit the dough into a 10-inch false-bottom quiche pan
- Line with foil and fill with rice
- Bake 10 minutes in a preheated 400 oven
- Remove foil and rice and bake 5 minutes longer or until lightly colored
