Avocado Corn Quiche

Ingredients

  • 3 ears fresh or frozen corn on the cob scraped of kernels
  • 34 c grated Havarti cheese or any white cheese
  • 4 green onions tops only chopped
  • 1 12 ripe avocados peeled and chopped
  • 12 c heavy cream
  • 12 c milk
  • 3 eggs lightly beaten
  • 12 tsp salt
  • dash of Tabasco
  • 10-inch partially baked pie shell

Directions

  1. Using your favorite pie crust recipe fit the dough into a 10-inch false-bottom quiche pan
  2. Line with foil and fill with rice
  3. Bake 10 minutes in a preheated 400 oven
  4. Remove foil and rice and bake 5 minutes longer or until lightly colored
