Baba GhanoujEggplant Puree

Ingredients

  • 2 unpeeled eggplant medium size
  • 2 cloves garlic
  • 14 c Tahini
  • 3 Tbsp lemon juice
  • 12 tsp salt
  • dash of paprika

Directions

  1. Place eggplant in a baking pan and bake in oven at 375 for about 30 minutes
  2. Remove eggplant and let cool split open and scoop out pulp set aside
