Bacon Cheese Potatoes

Ingredients
- 8 to 10 medium potatoes 2 12 to 3 lb
- 12 c finely chopped onion
- 1 lb processed American cheese cubed
- 1 c mayonnaise
- 12 lb bacon cooked and crumbled
- 34 c sliced black olives
- chopped fresh parsley optional
- paprika optional
Directions
- Peel potatoes place in a saucepan and cover with water
- Cook until tender but firm drain and cube
- In a bowl mix potatoes onion cheese and mayonnaise
- Transfer to an ungreased 13 x 9 x 2-inch baking dish
- Sprinkle with bacon and olives
- Cover and bake at 350 for 30 minutes or until heated through
- If desired sprinkle with parsley and paprika
