Bacon Lettuce And Tomato Soup
Ingredients
- 6 strips bacon cooked and crumbled
- 1 Tbsp bacon drippings strained
- 1 yellow onion finely chopped
- 2 cloves garlic minced
- 1 16 oz can plum tomatoes chopped
- 3 Tbsp tomato paste
- 1 Tbsp chopped fresh basil 1 tsp dried
- 3 Tbsp flour
- 4 c chicken stock
- 14 tsp sugar
- 1 tsp salt
- 14 tsp pepper
- 14 head lettuce shredded
Directions
- Saute onion and garlic in bacon drippings for 5 minutes
- Stir in tomatoes with liquid tomato paste and basil
- Cook 2 to 3 minutes
- Stir in flour and whisk to blend
- Add stock sugar salt and pepper
- Simmer 15 minutes
- Just before serving add bacon and lettuce
- Serve warm
- Serves 6 to 8
