Baked Ahead Potatoes

Ingredients

  • 6 large baking potatoes
  • 14 c butter
  • 1 tsp salt
  • 12 tsp pepper
  • 12 c sour cream
  • grated Swiss or Parmesan cheese

Directions

  1. Scrub pierce and bake potatoes at 425 for 1 hour or until tender
  2. Cool slightly
  3. Break in half lengthwise and scoop potatoes into a large bowl
  4. Beat in butter salt pepper and sour cream
  5. Refill shells
  6. Sprinkle grated cheese on top
  7. Bake at 350 for 30 or 40 minutes
  8. Freeze or refrigerate as desired Serves 6
