Baked Ahead Potatoes

Ingredients
- 6 large baking potatoes
- 14 c butter
- 1 tsp salt
- 12 tsp pepper
- 12 c sour cream
- grated Swiss or Parmesan cheese
Directions
- Scrub pierce and bake potatoes at 425 for 1 hour or until tender
- Cool slightly
- Break in half lengthwise and scoop potatoes into a large bowl
- Beat in butter salt pepper and sour cream
- Refill shells
- Sprinkle grated cheese on top
- Bake at 350 for 30 or 40 minutes
- Freeze or refrigerate as desired Serves 6
