Baked Apricot Casserole

Ingredients

  • 2 cans peeled apricots drained
  • 1 stick butter
  • 4 Tbsp plain flour
  • 12 c brown sugar
  • 18 or 20 Ritz crackers

Directions

  1. Butter a shallow casserole
  2. Melt butter in saucepan
  3. Add juice of 1 to 1 12 cans of apricot juice flour and brown sugar Stir until thickened
  4. Arrange apricots in dish
  5. Pour sauce over fruit
  6. Crumble crackers on top
  7. Bake at 350 until bubbly approximately 25 to 30 minutes
