Baked Bluefish Fillets With Creole Sauce
Ingredients
- 14 c salad oil
- 2 stalks celery sliced
- 12 c diced onions
- 1 c diced green bell pepper
- 2 cloves garlic minced
- 12 oz tomato paste
- 24 oz College Inn chicken broth
- 1 bay leaf
- 1 tsp basil
- 1 tsp oregano
- black pepper to taste
- 1 Tbsp fresh chopped parsley
- 1 c mushrooms sliced
- bluefish fillets
Directions
- Mix the first 5 ingredients together in a 2-quart pan and saute together for 10 minutes over medium heat
- Add remaining ingredients all but bluefish fillets and mix well over medium-low heat until vegetables are fully cooked about 15 minutes
- While this is cooking bake bluefish fillets in a 400 oven until fully cooked approximately 30 minutes
- When fish is cooked portion on plates and top with Creole sauce
