Baked Bluefish Fillets With Creole Sauce

Ingredients

  • 14 c salad oil
  • 2 stalks celery sliced
  • 12 c diced onions
  • 1 c diced green bell pepper
  • 2 cloves garlic minced
  • 12 oz tomato paste
  • 24 oz College Inn chicken broth
  • 1 bay leaf
  • 1 tsp basil
  • 1 tsp oregano
  • black pepper to taste
  • 1 Tbsp fresh chopped parsley
  • 1 c mushrooms sliced
  • bluefish fillets

Directions

  1. Mix the first 5 ingredients together in a 2-quart pan and saute together for 10 minutes over medium heat
  2. Add remaining ingredients all but bluefish fillets and mix well over medium-low heat until vegetables are fully cooked about 15 minutes
  3. While this is cooking bake bluefish fillets in a 400 oven until fully cooked approximately 30 minutes
  4. When fish is cooked portion on plates and top with Creole sauce
