Baked Cajun Cabbage

Ingredients
- 1 large cabbage cut bite size
- 1 c onion chopped
- 1 c celery chopped
- 1 c bell pepper chopped
- 12 c oleo
- 4 Tbsp flour
- dash of salt
- dash of cayenne pepper
- 1 12 c milk
- 12 lb Cheddar cheese shredded
- 14 c seasoned bread crumbs
Directions
- Boil cabbage 10 minutes uncovered until tender-crisp Drain
- Place in casserole Blend oleo and flour in saucepan over medium heat Add onion celery pepper salt and cayenne pepper Saute 10 minutes
- Add the milk and Cheddar Cheese Blend well until melted
- Pour over cabbage Top with the bread crumbs and bake at 350 for 30 minutes
- I use hot Mexican Velveeta cheese
