Baked Chicken Dinner In One Pan

Ingredients

  • 2 broilers cut in half 2 lb each
  • 6 medium potatoes peeled and quartered
  • 3 tender carrots cut in 18-inch slices
  • 3 small onions peeled and quartered
  • 1 tsp salt
  • 1 c half and half
  • 14 lb butter

Directions

  1. Place vegetables in a roasting pan which has a tight-fitting cover and that will be large enough to accomodate the chicken cut in half lengthwise
  2. Place chicken halves over the vegetables Sprinkle with salt and pepper pour half and half over this dot with butter
  3. Cover tightly and bake at 350 for 1 hour or until you can pierce the thickest part of the chicken with a sharp fork Uncover and place under broiler for 5 minutes or until golden brown
