Baked Chicken Reuben

Ingredients

  • 4 whole chicken breasts halved and boned
  • salt and pepper
  • 1 16 oz can sauerkraut press out excess liquid
  • 4 4 x 6-inch slices Swiss or Monterey type cheese
  • 1 12 c Thousand Island dressing
  • 1 Tbsp freshly chopped parsley

Directions

  1. Place skinned chicken breasts in 8-inch square baking dish that has been lightly oiled
  2. Lightly salt and pepper
  3. Place drained sauerkraut over chicken top with cheese slices one over each breast
  4. Pour dressing evenly over the cheese
  5. Cover with foil and bake in a 325 oven about 1 12 hours or until fork can be inserted in chicken with ease
  6. Sprinkle with chopped parsley Makes four servings
  7. Baked potato skins can also be baked at the same time
