Baked Chicken Reuben
Ingredients
- 4 whole chicken breasts halved and boned
- salt and pepper
- 1 16 oz can sauerkraut press out excess liquid
- 4 4 x 6-inch slices Swiss or Monterey type cheese
- 1 12 c Thousand Island dressing
- 1 Tbsp freshly chopped parsley
Directions
- Place skinned chicken breasts in 8-inch square baking dish that has been lightly oiled
- Lightly salt and pepper
- Place drained sauerkraut over chicken top with cheese slices one over each breast
- Pour dressing evenly over the cheese
- Cover with foil and bake in a 325 oven about 1 12 hours or until fork can be inserted in chicken with ease
- Sprinkle with chopped parsley Makes four servings
- Baked potato skins can also be baked at the same time
