Baked Flounder Cordon Bleu
Ingredients
- 2 lb flounder filets or 6 pieces
- 6 slices cooked ham
- 6 slices Swiss cheese
- 1 tsp grated orange rind
- 14 tsp white pepper
- 1 egg beaten
- 1 Tbsp butter or margarine
- 1 Tbsp flour
- 1 c light cream
- 14 c Parmesan cheese
Directions
- Place slice of ham and cheese in center of each filet
- Cut to fit sprinkle with grated orange rind and white pepper
- Roll into pinwheels and secure with wooden picks
- Gently dip roll into beaten egg and coat with bread crumbs
- Place in greased baking dish
