Baked Flounder Cordon Bleu

Ingredients

  • 2 lb flounder filets or 6 pieces
  • 6 slices cooked ham
  • 6 slices Swiss cheese
  • 1 tsp grated orange rind
  • 14 tsp white pepper
  • 1 egg beaten
  • 1 Tbsp butter or margarine
  • 1 Tbsp flour
  • 1 c light cream
  • 14 c Parmesan cheese

Directions

  1. Place slice of ham and cheese in center of each filet
  2. Cut to fit sprinkle with grated orange rind and white pepper
  3. Roll into pinwheels and secure with wooden picks
  4. Gently dip roll into beaten egg and coat with bread crumbs
  5. Place in greased baking dish
