Baked German Potato Salad
Ingredients
- 1 c diced bacon scant 5 oz
- 1 c chopped celery
- 1 c chopped onion
- 3 Tbsp all-purpose flour
- 1 tsp salt
- 12 tsp black pepper
- 23 c sugar
- 23 c cider vinegar
- 1 12 c water
- 13 c chopped fresh parsley
- 2 tsp celery seed
- 2 qt potatoes boiled peeled and sliced 18 inch thick red ones are ideal
Directions
- Fry bacon until crisp in medium skillet
- Remove with slotted spoon and reserve
- In there is not approximately 14 cup of fat left add additional bacon fat or oil to make that amount
- Add celery and green onion and cook over medium heat 3 to 4 minutes Add flour salt and pepper and cook 2 minutes longer
- Add sugar vinegar and water all at once and stirring with a whisk bring to boil and cook 1 minute
- Add parsley celery seed and reserved bacon and combine
- Remove from heat
