Baked German Potato Salad

Ingredients

  • 1 c diced bacon scant 5 oz
  • 1 c chopped celery
  • 1 c chopped onion
  • 3 Tbsp all-purpose flour
  • 1 tsp salt
  • 12 tsp black pepper
  • 23 c sugar
  • 23 c cider vinegar
  • 1 12 c water
  • 13 c chopped fresh parsley
  • 2 tsp celery seed
  • 2 qt potatoes boiled peeled and sliced 18 inch thick red ones are ideal

Directions

  1. Fry bacon until crisp in medium skillet
  2. Remove with slotted spoon and reserve
  3. In there is not approximately 14 cup of fat left add additional bacon fat or oil to make that amount
  4. Add celery and green onion and cook over medium heat 3 to 4 minutes Add flour salt and pepper and cook 2 minutes longer
  5. Add sugar vinegar and water all at once and stirring with a whisk bring to boil and cook 1 minute
  6. Add parsley celery seed and reserved bacon and combine
  7. Remove from heat
