Baked Groundhog

Ingredients
- 1 5 lb young groundhog
- 6 potatoes sliced
- 6 carrots sliced
- 1 medium onion sliced or diced
- 2 stalks celery sliced
- 2 c water
- 1 tsp salt
Directions
- Clean groundhog good
- Put in pot and bring to a boil cook for 10 minutes Turn head down cook for 20 minutes more
- Remove from pot
- Put in a baking pan
- Bake at 350 for 1 12 hours or real tender
- Add 1 cup of water from the pot to bake in
- Add all ingredients 12 hour before groundhog is done
