Baked Groundhog

Ingredients

  • 1 5 lb young groundhog
  • 6 potatoes sliced
  • 6 carrots sliced
  • 1 medium onion sliced or diced
  • 2 stalks celery sliced
  • 2 c water
  • 1 tsp salt

Directions

  1. Clean groundhog good
  2. Put in pot and bring to a boil cook for 10 minutes Turn head down cook for 20 minutes more
  3. Remove from pot
  4. Put in a baking pan
  5. Bake at 350 for 1 12 hours or real tender
  6. Add 1 cup of water from the pot to bake in
  7. Add all ingredients 12 hour before groundhog is done
