Baked Potato Mice

Ingredients

• 1 tsp salt
• 4 medium potatoes
• 2 to 3 Tbsp melted butter
• 2 to 3 Tbsp chopped herbs such as parsley chives sage thyme
• 4 Tbsp grated Cheddar cheese
• 1 12 Tbsp Parmesan cheese
• parsley tail and stem

Directions

1. Peel potatoes
2. Cut into thin slices but not all the way through use handle of a spoon to prevent knife from cutting all the way
3. Put potatoes in a baking dish fanning them slightly Sprinkle salt and spread butter
4. Sprinkle herbs
5. Bake at 450 for 50 minutes
6. Remove from oven
7. Sprinkle on cheese
8. Bake for 7 to 10 minutes more
9. Add parsley ears and tail from parsley stem
