Baked Potato Skins

Ingredients

  • 6 large baking potatoes
  • 3 to 4 Tbsp butter or margarine melted
  • 1 14 tsp freshly ground pepper
  • 12 tsp onion salt
  • 12 tsp garlic salt
  • 14 c grated Parmesan cheese
  • commercial sour cream

Directions

  1. Scrub potatoes thoroughly and prick several times with a fork Bake at 400 for 1 to 1 14 hours or until done
  2. Allow to cool to touch
  3. Cut potatoes in half lengthwise carefully scoop out pulp leaving about 14-inch thick shells
  4. Cut each shell into 1 inch wide strips and place on ungreased baking sheets
  5. Brush tops of strips with butter sprinkle with seasoning and cheese
  6. Bake at 400 for 10 to 12 minutes or until crisp
  7. Serve warm with sour cream
