Baked Red Snapper
Ingredients
- 1 5 to 8 lb red snapper or fillets
- 1 stick oleo
- 14 to 12 c chopped bell pepper
- 14 to 12 c chopped onion
- 14 c chopped celery
- 14 c chopped green onion
- 2 or 3 lemons sliced
- 2 cans stewed tomatoes
- 12 c wine red or white
- salt and pepper to taste
Directions
- Melt oleo and saute bell pepper onions celery and green onions until tender
- Add tomatoes wine and seasoning
- Cook slowly on medium heat for 20 minutes
- Place fish in baking dish Pour sauce over fish
- Add sliced lemons over fish and bake at 350 for 30 to 40 minutes
- Baste fish with sauce
- Fish should be tender when stuck with a fork
