Baked Seafood Rice Salad

Ingredients
- 1 13 c rice cooked
- 1 c chopped celery
- 12 c green pepper finely chopped
- 3 green onions finely sliced
- 1 6 12 oz can water chestnuts
- 1 4 12 oz can medium shrimp drained
- 1 6 12 oz can crabmeat or chicken
- 1 c mayonnaise
- 34 c tomato juice
- grated Parmesan cheese
Directions
- Combine first 9 ingredients
- Put in shallow 2 quart casserole and sprinkle with cheese
- Bake at 350 for 25 minutes
- Makes 6 servings
