Baked Seafood Rice Salad

Ingredients

  • 1 13 c rice cooked
  • 1 c chopped celery
  • 12 c green pepper finely chopped
  • 3 green onions finely sliced
  • 1 6 12 oz can water chestnuts
  • 1 4 12 oz can medium shrimp drained
  • 1 6 12 oz can crabmeat or chicken
  • 1 c mayonnaise
  • 34 c tomato juice
  • grated Parmesan cheese

Directions

  1. Combine first 9 ingredients
  2. Put in shallow 2 quart casserole and sprinkle with cheese
  3. Bake at 350 for 25 minutes
  4. Makes 6 servings
