Baked Soybeans

Ingredients

  • 2 18 c soybeans dry
  • 3 12 c tomatoes one No 2 12 can
  • 1 c sauteed onions
  • 14 c oil
  • 6 12 c water
  • 1 to 2 Tbsp blackstrap molasses
  • 14 c brown sugar packed
  • 2 tsp salt
  • 14 c lemon juice
  • 1 tsp sweet basil
  • 12 c tomato paste

Directions

  1. Pressure cook soybeans in water 1 hour
  2. Drain juice from tomatoes and add to sauteed onions in heavy skillet
  3. Simmer
  4. Cut tomatoes in small pieces and add to juice
  5. Add brown sugar oil and salt
  6. Mix
  7. Add to cooked soybeans
  8. I often just add all these ingredients to beans without any precooking
  9. Bake at 350 until juice is thickened
  10. Add lemon juice and sweet basil
  11. Add 12 can plain tomato paste
  12. Yield
