Baked Soybeans
Ingredients
- 2 18 c soybeans dry
- 3 12 c tomatoes one No 2 12 can
- 1 c sauteed onions
- 14 c oil
- 6 12 c water
- 1 to 2 Tbsp blackstrap molasses
- 14 c brown sugar packed
- 2 tsp salt
- 14 c lemon juice
- 1 tsp sweet basil
- 12 c tomato paste
Directions
- Pressure cook soybeans in water 1 hour
- Drain juice from tomatoes and add to sauteed onions in heavy skillet
- Simmer
- Cut tomatoes in small pieces and add to juice
- Add brown sugar oil and salt
- Mix
- Add to cooked soybeans
- I often just add all these ingredients to beans without any precooking
- Bake at 350 until juice is thickened
- Add lemon juice and sweet basil
- Add 12 can plain tomato paste
