Baked Stuffed Onions

Ingredients

  • 6 large onions
  • 12 tsp salt
  • 2 Tbsp vegetable oil
  • 14 lb ground beef
  • 1 c cooked rice
  • 1 egg yolk
  • 12 c soft bread crumbs
  • 12 tsp salt
  • 12 tsp pepper
  • 2 Tbsp melted butter
  • 2 Tbsp grated Parmesan cheese
  • 12 c soft bread crumbs
  • 1 Tbsp chopped parsley

Directions

  1. Cut off root peel and rinse onions
  2. Cut a 12-inch slice from the top of each onion
  3. Cook onion uncovered in salted water to cover for 10 to 15 minutes or until slightly tender Drain well cool
  4. Heat oil in skillet add ground beef and saute until browned
  5. Scoop centers out of onions chop and add to ground beef
  6. Saute until golden
  7. Combine rice egg yolk salt pepper and bread crumbs with meat mixture
  8. Fill onions
  9. Mix together melted butter cheese parsley and bread crumbs
  10. Spread over top of onions
  11. Bake in a greased casserole in a 350 oven for 1 hour
  12. Serves 6
