Baked Stuffed Onions
Ingredients
- 6 large onions
- 12 tsp salt
- 2 Tbsp vegetable oil
- 14 lb ground beef
- 1 c cooked rice
- 1 egg yolk
- 12 c soft bread crumbs
- 12 tsp salt
- 12 tsp pepper
- 2 Tbsp melted butter
- 2 Tbsp grated Parmesan cheese
- 12 c soft bread crumbs
- 1 Tbsp chopped parsley
Directions
- Cut off root peel and rinse onions
- Cut a 12-inch slice from the top of each onion
- Cook onion uncovered in salted water to cover for 10 to 15 minutes or until slightly tender Drain well cool
- Heat oil in skillet add ground beef and saute until browned
- Scoop centers out of onions chop and add to ground beef
- Saute until golden
- Combine rice egg yolk salt pepper and bread crumbs with meat mixture
- Fill onions
- Mix together melted butter cheese parsley and bread crumbs
- Spread over top of onions
- Bake in a greased casserole in a 350 oven for 1 hour
- Serves 6
