Baked Stuffed ShrimpServes 4
Ingredients
- 1 roll Ritz crackers crushed
- 14 c parsley chopped fine
- 2 tsp garlic minced
- 2 Tbsp lemon juice
- 12 c butter
- 2 Tbsp grated Parmesan
- 12 shrimp jumbo size
- 14 lb scallops
Directions
- Melt butter in medium saucepan
- Add minced garlic and saute until soft
- Add chopped scallops and cook for 1 minute
- Add remaining ingredients and stir until mixed
- Mixture should be moist enough to mold when pinched
- Stuff each shrimp and bake in 350 oven for 10 to 12 minutes or until shrimp becomes white
