Baked Vegetable Omelet
Ingredients
- 2 c shredded Pepper Jack Monterey Jack or Cheddar cheese
- 3 c frozen broccoli thawed drained and chopped
- 1 12 c chopped tomatoes
- 14 to 12 c diced green and red pepper
- 12 c green onion or regular onion chopped
- 2 c fresh mushrooms sliced
- 2 c additional Cheddar cheese
- 2 c milk
- 12 c all-purpose flour
- 1 tsp salt
- dash of pepper
- 6 eggs
Directions
- Lightly grease a 9 x 13-inch baking dish
- Layer Pepper Jack cheese vegetables then Cheddar cheese in dish
- Beat milk flour salt pepper and eggs until smooth pour over cheese Bake uncovered for 40 to 45 minutes at 350 until the egg mixture is set
- Let stand 10 minutes before serving
- Great for brunch
