Baked Vegetable Omelet

Ingredients

  • 2 c shredded Pepper Jack Monterey Jack or Cheddar cheese
  • 3 c frozen broccoli thawed drained and chopped
  • 1 12 c chopped tomatoes
  • 14 to 12 c diced green and red pepper
  • 12 c green onion or regular onion chopped
  • 2 c fresh mushrooms sliced
  • 2 c additional Cheddar cheese
  • 2 c milk
  • 12 c all-purpose flour
  • 1 tsp salt
  • dash of pepper
  • 6 eggs

Directions

  1. Lightly grease a 9 x 13-inch baking dish
  2. Layer Pepper Jack cheese vegetables then Cheddar cheese in dish
  3. Beat milk flour salt pepper and eggs until smooth pour over cheese Bake uncovered for 40 to 45 minutes at 350 until the egg mixture is set
  4. Let stand 10 minutes before serving
  5. Great for brunch
