Baked Zucchini With Tomatoes

Ingredients

  • 3 medium zucchini about 34 lb
  • 3 ripe plum tomatoes about 12 lb
  • 1 medium green pepper cored seeded and chopped
  • 12 c finely chopped onion
  • 2 tsp finely chopped garlic
  • 2 tsp finely chopped marjoram or 1 tsp dried
  • freshly ground black pepper
  • 2 Tbsp olive oil
  • 2 Tbsp freshly grated Parmesan cheese

Directions

  1. Preheat oven to 425
  2. Trim off the ends of the zucchini and core the tomatoes
  3. Cut each into equal horizontal slices Arrange the slices in an oven-proof baking dish with the edges slightly overlapping
  4. Alternate layers of zucchini and tomatoes
