Baked Zucchini With Tomatoes

Ingredients
- 3 medium zucchini about 34 lb
- 3 ripe plum tomatoes about 12 lb
- 1 medium green pepper cored seeded and chopped
- 12 c finely chopped onion
- 2 tsp finely chopped garlic
- 2 tsp finely chopped marjoram or 1 tsp dried
- freshly ground black pepper
- 2 Tbsp olive oil
- 2 Tbsp freshly grated Parmesan cheese
Directions
- Preheat oven to 425
- Trim off the ends of the zucchini and core the tomatoes
- Cut each into equal horizontal slices Arrange the slices in an oven-proof baking dish with the edges slightly overlapping
- Alternate layers of zucchini and tomatoes
