Banana-Nut Bread
Ingredients
- 3 ripe bananas
- 2 eggs
- 1 12 c flour
- 12 c wheat germ or oatmeal
- 14 c oil
- 12 tsp salt
- 1 tsp baking powder
- 12 c nuts coarsely chopped
- 34 c sugar
- 1 tsp vanilla
Directions
- Preheat oven to 350
- Mash bananas well with a fork
- In the mixer beat eggs until they are light
- Add the mashed bananas and mix thoroughly
- Sift together the dry ingredients except the wheat germ and add all including wheat germ to the banana mixture stir well
- Add the nuts
- Bake at 350 for 1 hour for the large pan 50 minutes for smaller pans
- This bread should be cooled before slicing
- It freezes very well
- Makes one 9 x 5-inch loaf or 2 small 7 12 x 3 12-inch loaves
